Friday nights at my house have always been “Pizza Fridays”, but until lately the menu consisted of grease dripping, cheese laden, thick doughy slices of fat waiting to happen. Here’s an easy and healthy way to spruce up your pizza friday without even having to tip the delivery guy.
What you’ll need:
12” Boboli 100% Whole Wheat Thin Crust
1/2 bottle of Stubb’s Bar-B-Q Sauce
2 cups Kraft natural low-moisture part skim mozzarella shreds
Boneless skinless chicken breast
Choice of added spices or garnish
Quick Prep:
1) Preheat oven to 425. Grill chicken breast and let cool for 5-10 minutes before you begin the shredding. With a fork in each hand, shred the breast into strips thin enough to fit onto each slice. 2) Toss the shredded chicken in some of the Bar-B-Q sauce and let marinade for another 5-10 minutes. 3) Generously cover the crust with a layer of the Bar-B-Q sauce followed by a layer of cheese. 4) Spread the shredded, marinated chicken evenly over the cheese, add any additional spices (such as some crushed cayenne pepper, which contains a phytochemical called capsaicin that has been shown to raise metabolism), pop it in the oven and set the timer for 10-12 minutes. 5) *Most important step* While you wait for a little slice of heaven, come check out the page for any updates and hit me with some feedback! Then when the timer calls your name, make sure the cheese is melted and bubbling, pull it out and set on stovetop to cool. 6) Slice and serve up this cacophony of flavors with a little green tea to wash it down. Go in for a second slice and you’ll still be just under the 300 calorie mark!
